I don't own an iPhone (yet), but it looks like the underscore key (and the other 15 keyboard keys) are on the third keyboard.
Keyboard 1 - Alphabet
Keyboard 2 - Numbers and common symbols (reached via the grey ".?123" key on the lower left of Keyboard 1)
Keyboard 3 - Uncommon symbols (reached via the grey "#+*" key one row up from the lower left of Keyboard 2).
how do u add the heart symbol to the keyboard?
